Overview
Gorgonzola PDO is a blue cheese from pasteurised whole cow’s milk. The rind is grey or pink and is not eaten. EU rules split the name by size, taste, and time.
Dolce, large wheel (9–13.5 kg): mild, minimum 50 days, maximum 150. Piccante, large wheel: pronounced, minimum 80 days, maximum 270. A smaller piccante wheel has a 60-day floor. The consortium repeats those windows in plain language.
Two tempers
Dolce stays wet and sweet-leaning. Piccante dries, and the veins read sharper. If blue has always felt like an argument, Dolce is the truce. Heat in a risotto will also turn the volume down.
