
Overview
Queso Manchego is a pressed cheese from the milk of Manchega ewes raised in designated parts of Albacete, Ciudad Real, Cuenca, and Toledo. Aging is at least 30 days for cheeses up to 1.5 kg and 60 days for heavier formats, and not more than two years. Milk may be raw or pasteurised; raw-milk wheels may say Artesano.
The zigzag
The herringbone print copies esparto-grass moulds. Some dairies still use grass; others use plastic that remembers the pattern. The print is a clue. The casein plaque and numbered back label are the ID.
Shop words like fresco, semicurado, curado, and viejo are not the same thing as the legal minima. A two-week “fresh Manchego” is usually outside the PDO fence. Quince paste (membrillo) is an old plate, not a social-media invention.
