Overview

Sainte-Maure de Touraine is a goat log from the Loire, protected as an AOP since 1990. INAO: raw whole goat’s milk, truncated cone, ash coat, a cereal straw through the axis, at least ten days of aging. The straw carries the producer’s name and approval number. A log that only says “Sainte-Maure” is often another cheese.

A fast calendar

The set is mainly lactic, with little rennet. Goat logs change by the day. Young, they read as lemon and chalk. A little age brings nut and a clearer goat note. Ash is not dirt; it dries the rind so yeast-like Geotrichum can wrinkle it. Pull the straw on a genuine log and you are supposed to find the dairy — a paper trail you can eat around.
