
Overview
Taleggio is a square washed-rind PDO: 18–20 cm on a side, 1.5–2.5 kg after the legal minimum of 35 days. Milk is whole cow’s milk, raw or pasteurised, from designated provinces in Lombardy, Piedmont, and Veneto. The consortium writes aging rooms at 1–6°C with humidity above 80%. The only rind treatment allowed is water and salt.
Smell versus paste
The box can smell louder than the slice. Ripening is centripetal: enzymes walk in from the smear. The paste can stay lactic and gentle while the coat does the stink. If the paste is bitter, cracked, or the rind is slimy beyond a thin smear, you are not looking at “more character.” You are looking at a rind that left the plan.
