Erez Garty maps yeast, bacteria, and mold as kitchen staff. Cheese starts when bacteria eat lactose and spit lactic acid. Different strains, different wheels. That sentence is the cultures note in one breath.

The film’s Swiss-hole line is carbon dioxide from propionibacteria. Keep it attached to the right wheels. Le Gruyère AOP is usually dense. Cartoon holes are a good way to pick the wrong alpine cheese. Eyes are a gas story, not an ID card for every hard wheel.

Brie invites mold on purpose — Penicillium camemberti on the coat, ripening inward. Random fridge fur is still a no. Blue veins are a different Penicillium, roqueforti, and they need a pierce so oxygen can paint the marble. Washed rinds hire a wet smear, often with Brevibacterium, not a white velvet.

A four-minute kitchen tour will not identify a species under your lens. Microscopy on this site is for structure: hyphae versus smear versus vein. Naming a new strain from a phone photo is another kind of failure. Watch the staff diagram. Then read who is actually on shift for the cheese you cut.
