Why yogurt goes sour

Why this is on a cheese atlas
The bug splits lactose, runs glycolysis, and dumps acid as waste. The acid is the sour. It also sets the gel and keeps wilder microbes out. Milk lasts because the pH got rude. Cheese starts with that same fall.
In a vat, pH is a door. Pasta filata stretches only when acidity hits a narrow band; miss it and Mozzarella di Bufala Campana is a lump, not a thread. Bloomy cheeses later let rind fungi raise surface pH and send enzymes inward — so a white heart is a calendar. Yogurt does not do that second trick.
The film’s drop from about pH 6 to 4 is a yogurt story. Do not paste it onto every cheese. Hard cooked wheels, goat logs, and blues all acidify, then they salt, drain, and age in different rooms. “Sour” is not a complete tasting note and not a complete make.
